Is it acceptable to have rice cakes with peanut butter as a scheduled lunch plan?!

NO, Calli! Please, NO! This is what Sally Fallon has to say about it: "Whole grains that have been processed by high heat and pressure to produce puffed wheat, oats, and rice are actually quite toxic and have caused rapid death in test animals. We do not recommend rice cakes, a popular snack food." (p. 25, Nourishing Traditions) Elsewhere in the book, she describes the actual lab test in which the rats eating puffed grain died within two weeks, but those rats eating just the cardboard cereal box lived longer! She goes on to talk about all boxed breakfast cereals in general, which we now avoid like the plague. So please, for the sake of health, do NOT have rice cakes for lunch once a week! I write this in LOVE, because I CARE about you all!
I agree with Sara. You may also want to reconsider peanut butter as a protein. It's a legume so it raises your blood sugar like a carbohydrate, or so i am told. We do almond butter as much as possible. just don't rely on peanut butter as a complete protein.
Okay, you guys. Can you hear that I'm just yearning for something to be SIMPLE!? When everything is homemade and with everything else going on, I was hoping for one shortcut. Alas! We do both almond butter and peanut butter. . . but I guess I'm looking for simple meal plans that will satisfy my very hungry family.
i wondered how you would take this, calli. i'm sorry i freaked out and overreacted. i should have waited till i could word my comment w/ more tact, but i just grabbed the book and started preaching. forgive me? i'm w/ you on the simple--it's really hard!!!! if it makes you feel better, i knowingly feed my kids turkey hot dogs...pretty often. cringe. and we also fly thru the (natural) peanut butter, too. love you and hear you!
p.s. what about the pb or ab on whole wheat tortillas instead of rice cakes, and rolled up? I like it rolled around a banana, and the kids like raw honey added in. Sometimes it's raisins/craisins, etc. Same for a whole wheat flatbreads: spread w/ nut butter, then top w/ honey, if desired, and banana slices, dried fruit, and/or chopped celery and leave open- faced, pizza-style. Hey--isn't that similar to Dr. Sears' "pretty pizzas" from the DVD?! :) I'm open for more suggestions, too!
